HUMMUS

 

1 can drained chick-peas
lemon juice (juice of 2/3 - 1 medium lemon)
2 crushed garlic cloves
3 tablespoons Tahini
3/4 teaspoons salt (or to taste)
3 tablespoons olive oil
1 tablespoon chopped fresh parsley
paprika to garnish

 

1. Put chick peas in a food processor or blender with garlic, salt and approximately half of the lemon juice. Blend.

2. Add Tahini and rest of the lemon juice. Blend thoroughly until smooth.

3. Put in a bowl or serving platter and drizzle olive oil around the outside edge. Garnish with chopped fresh parsley and paprika.

4. Serve with warm pita bread.
