KING DAVID'S LENTIL SOUP

 

3 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
4 large carrots, sliced
2 stalks celery, sliced
1 small parsnip, diced
4 potatoes, diced
1 1/2 cups lentils
1/4 cup brown rice
1/4 - 1/2 cup tamari soy sauce
pinch thyme
2 teaspoons salt
1 bay leaf
12 cups water

1. In a 6 quart pot, heat the oil and sauté the onion and garlic about 5 minutes until tender.

2. Add remaining ingredients.

3. Bring to boil and cook over low flame for 11/2 hours.

4. Stir occasionally, adding water if necessary.

5. Remove bay leaf before serving.
